Ingredients
½ cup small pearl tapioca
3 cups whole milk (or 2% works too)
½ cup sugar
2 large eggs
½ tsp vanilla extract
Pinch of salt
Instructions
Soak Tapioca
Place tapioca pearls in water and soak for about 30 minutes. Drain.
Cook Base
In a medium saucepan, combine tapioca, milk, and salt. Cook over medium heat, stirring often, until the mixture begins to thicken and pearls become translucent (about 15 minutes).
Add Eggs
In a small bowl, beat eggs. Slowly whisk in a bit of the hot tapioca mixture to temper the eggs (so they don’t scramble).
Then, return egg mixture back into the saucepan and stir well.
Sweeten
Add sugar and continue cooking on low heat for another 5 minutes, stirring constantly until thick and creamy.
Finish
Remove from heat and stir in vanilla extract.
Serve
Spoon into bowls or glasses. Serve warm for cozy comfort or chilled for a refreshing treat.
