Keto Sausage, Cauliflower & Broccoli Casserole
A simple, hearty, and keto-friendly dish that’s perfect for meal prep and leftovers.
Instructions
Cook the sausage:
Brown the sausage in a skillet along with diced onion and minced garlic until fully cooked and fragrant.
Steam the vegetables:
Steam plenty of cauliflower and broccoli.
(Using extra cauliflower helps lower the carbs and creates a great base.)
Combine:
Add the cooked sausage mixture to the steamed vegetables and let everything simmer together for a few minutes.
Add cheese:
Just before serving, stir in a few cups of shredded cheese.
(Mozzarella works great, but use your favorite melty cheese.)
Serve & Store:
Enjoy warm. This casserole reheats very well and makes excellent leftovers.
