Mediterranean Ground Beef & Zucchini Skillet

Ingredients

  • 1 lb (450 g) ground beef

  • 2 medium zucchini, sliced into rounds or half-moons

  • 1½ cups cherry tomatoes, halved

  • ½ red onion, sliced

  • 2 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 tsp dried oregano

  • ½ tsp paprika

  • ½ tsp salt (adjust to taste)

  • ¼ tsp black pepper

  • ¼ tsp red pepper flakes (optional)

  • ⅓ cup crumbled feta cheese

  • 2 tbsp fresh parsley or basil, chopped

  • Lemon wedges (optional, for serving)


Instructions

  1. Cook the beef
    Heat 1 tbsp olive oil in a large skillet over medium heat.
    Add ground beef, season with salt and pepper, and cook until browned.
    Drain excess fat if needed and remove beef from skillet.

  2. Cook the vegetables
    Add remaining olive oil to the same skillet.
    Sauté onion for 2–3 minutes until softened.
    Add garlic and cook 30 seconds.
    Add zucchini and cook 4–5 minutes until lightly golden.

  3. Combine
    Return beef to the skillet.
    Add cherry tomatoes, oregano, paprika, and red pepper flakes.
    Cook 3–5 minutes, just until tomatoes soften but don’t collapse.

  4. Finish
    Turn off heat. Sprinkle feta cheese and fresh herbs on top.
    Add a squeeze of lemon juice if desired.


Serving Ideas

  • Serve as-is for a low-carb meal

  • Spoon over rice, quinoa, or couscous

  • Stuff into pita bread or wraps
