Caesar Chicken with Asparagus

Ingredients

  • 4 boneless, skinless chicken breasts

  • Salt & black pepper, to taste

  • 1 tbsp olive oil

  • 1 tbsp butter (optional, for richness)

  • 1 lb (450 g) asparagus, trimmed

  • ½ cup Caesar dressing (store-bought or homemade)

  • ½ cup freshly grated Parmesan cheese

  • 2 cloves garlic, minced

  • 1 tsp Italian seasoning

  • Juice of ½ lemon + lemon wedges for serving

  • Fresh parsley, chopped (optional)


Instructions

  1. Season the chicken
    Pat chicken dry and season both sides with salt, pepper, and Italian seasoning.

  2. Sear the chicken
    Heat olive oil (and butter if using) in a large skillet over medium-high heat.
    Sear chicken for 5–6 minutes per side until golden and mostly cooked through.
    Remove chicken and set aside.

  3. Cook the asparagus
    In the same skillet, add asparagus and garlic.
    Sauté for 2–3 minutes until just tender but still bright green.

  4. Make it Caesar-style
    Reduce heat to medium-low.
    Stir in Caesar dressing and lemon juice, scraping up browned bits from the pan.

  5. Combine & finish
    Nestle chicken back into the skillet over the asparagus.
    Spoon sauce over the chicken.
    Sprinkle Parmesan generously on top.

  6. Melt & serve
    Cover skillet and cook 3–5 minutes, until chicken is fully cooked (165°F / 74°C) and cheese is melted.
    Garnish with parsley and serve with lemon wedges.
