🛒 Ingredients

  • 2 medium apples, peeled and diced

  • 2 eggs

  • ½ cup (120g) yogurt (plain or vanilla)

  • ½ cup (100g) sugar

  • ⅓ cup (80ml) vegetable oil or melted butter

  • 1 tsp vanilla extract

  • 1¼ cups (160g) all-purpose flour

  • 1½ tsp baking powder

  • ¼ tsp salt

  • ½ tsp cinnamon (optional for that apple pie flavor)

  • Sliced almonds (optional, for topping)

👩‍🍳 Instructions1. Preheat Oven

Preheat your oven to 350°F (175°C). Grease and flour a loaf pan or line it with parchment paper.

2. Prepare the Apples

Peel and dice the apples into small cubes.
(Optional: toss with a pinch of sugar and cinnamon for extra flavor.)

3. Make the Batter

In a large bowl, whisk eggs and sugar until light and fluffy.
Add yogurt, oil (or melted butter), and vanilla; whisk until smooth.
Sift in the flour, baking powder, salt, and cinnamon. Gently fold until just combined — don’t overmix!

4. Assemble

Spread the diced apples evenly into the prepared pan.
Pour the batter over the apples and smooth out the top.

5. Bake

Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
