✅ Ingredients
-
1 lb ground beef (or ground turkey/chicken)
-
1 large onion, chopped
-
3 bell peppers (red & green), diced
-
3 cloves garlic, minced
-
1 can (15 oz) tomato sauce
-
1 can (14.5 oz) diced tomatoes
-
4 cups beef broth (or chicken broth)
-
1 cup cooked rice (white, brown, or cauliflower rice for low-carb)
-
2 tsp Italian seasoning
-
1 tsp smoked paprika (optional)
-
½ tsp red pepper flakes (optional, for heat)
-
Salt & black pepper, to taste
-
Fresh parsley, chopped (for garnish)
Instructions
-
Cook meat: In a large pot or Dutch oven, cook ground beef over medium heat until browned. Drain excess grease.
-
Add veggies: Stir in onion, bell peppers, and garlic. Cook until softened, about 5 minutes.
-
Build soup base: Add tomato sauce, diced tomatoes, beef broth, Italian seasoning, paprika, red pepper flakes, salt, and pepper. Stir well.
-
Simmer: Bring to a boil, then reduce heat and simmer for 30 minutes to let flavors blend.
-
Add rice: Stir in cooked rice and simmer 5 more minutes. (If using cauliflower rice, add just before serving to prevent overcooking.)
-
Serve: Ladle into bowls and garnish with fresh parsley.
🔑 Notes
-
Add a sprinkle of shredded mozzarella or Parmesan on top for extra “stuffed pepper” vibes.
-
For meal prep, store rice separately and add when reheating to avoid mushiness.
🌟 Variations
-
Low-Carb/Keto: Replace rice with cauliflower rice.
-
Spicy Twist: Use Rotel tomatoes with chilies instead of plain diced tomatoes.
-
Hearty Style: Add black beans or corn for Tex-Mex flair.
❄️ Storage
-
Fridge: Store in airtight container for up to 4 days.
-
Freezer: Freeze without rice for up to 3 months; add fresh rice when reheating.
