✅ Ingredients

  • 1 lb ground beef (or ground turkey/chicken)

  • 1 large onion, chopped

  • 3 bell peppers (red & green), diced

  • 3 cloves garlic, minced

  • 1 can (15 oz) tomato sauce

  • 1 can (14.5 oz) diced tomatoes

  • 4 cups beef broth (or chicken broth)

  • 1 cup cooked rice (white, brown, or cauliflower rice for low-carb)

  • 2 tsp Italian seasoning

  • 1 tsp smoked paprika (optional)

  • ½ tsp red pepper flakes (optional, for heat)

  • Salt & black pepper, to taste

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook meat: In a large pot or Dutch oven, cook ground beef over medium heat until browned. Drain excess grease.

  2. Add veggies: Stir in onion, bell peppers, and garlic. Cook until softened, about 5 minutes.

  3. Build soup base: Add tomato sauce, diced tomatoes, beef broth, Italian seasoning, paprika, red pepper flakes, salt, and pepper. Stir well.

  4. Simmer: Bring to a boil, then reduce heat and simmer for 30 minutes to let flavors blend.

  5. Add rice: Stir in cooked rice and simmer 5 more minutes. (If using cauliflower rice, add just before serving to prevent overcooking.)

  6. Serve: Ladle into bowls and garnish with fresh parsley.

🔑 Notes

  • Add a sprinkle of shredded mozzarella or Parmesan on top for extra “stuffed pepper” vibes.

  • For meal prep, store rice separately and add when reheating to avoid mushiness.

Recommended  Pan scored potatoes

🌟 Variations

  • Low-Carb/Keto: Replace rice with cauliflower rice.

  • Spicy Twist: Use Rotel tomatoes with chilies instead of plain diced tomatoes.

  • Hearty Style: Add black beans or corn for Tex-Mex flair.

❄️ Storage

  • Fridge: Store in airtight container for up to 4 days.

  • Freezer: Freeze without rice for up to 3 months; add fresh rice when reheating.

💌 Final Notes

This Stuffed Pepper Soup is hearty, flavorful, and comforting — everything you love about stuffed peppers, but so much easier to make!
