Fried Rice
30 ml sesame oil, divided
4 large eggs, beaten
½ tsp kosher salt
2 large carrots, diced
1 large white onion, diced

800 g cooked long-grain white rice, cooled
60 ml unsalted butter, melted
1 tsp freshly squeezed lemon juice
30 ml soy sauce
55 g frozen peas
👩🍳 Instructions
Cook the Chicken
In a bowl, toss chicken with vegetable oil, paprika, garlic powder, salt, and pepper.
Preheat air fryer to 204°C (400°F).
Arrange chicken in a single layer and cook for 11–12 minutes, turning halfway, until golden and internal temp reaches 74°C (165°F).
Transfer to a bowl, cover with foil to keep warm.
Scramble the Eggs
Heat 15 ml sesame oil in a large skillet/wok over high heat.
Pour in beaten eggs, season with salt, and scramble until just set into soft curds.
Remove eggs to a plate.
Cook the Vegetables
Reduce heat to medium-high. Add remaining sesame oil.
Sauté carrots, white onion, and green onions for 5 minutes until carrots are tender.
Stir in garlic and cook for 1 minute.
Make the Fried Rice
Add cooled rice, breaking up clumps, and stir-fry for 2–3 minutes until heated through.
Return eggs to the skillet. Stir in melted butter, lemon juice, soy sauce, and peas.
Cook for 2–3 minutes more until hot and well combined.
Assemble
Toss cooked chicken with 120 ml Bang Bang sauce until coated.
Plate fried rice, top with chicken, drizzle with remaining sauce, and garnish with green onions.
