🛒 Ingredients

For the Filling:

  • 6 slices thick-cut bacon, cooked and crumbled

  • 4 oz cream cheese, softened

  • 2 tbsp maple syrup

  • 1 tbsp brown sugar

For the Toast:

  • 8 thick slices of brioche or challah bread

  • 3 large eggs

  • ½ cup whole milk

  • ½ cup heavy cream

  • 1 tsp vanilla extract

  • ½ tsp cinnamon

  • Pinch of salt

  • 1 tbsp butter (for cooking)

For the Bourbon Maple Syrup:

  • ½ cup pure maple syrup

  • 1 tbsp bourbon (optional but recommended)

  • 1 tbsp butter

1. Make the Filling

In a small bowl, combine softened cream cheese, maple syrup, and brown sugar until smooth. Fold in the crumbled bacon and set aside.

2. Prepare the Bread

Take 4 slices of brioche and spread the bacon-maple filling evenly on each.
Top with another slice of brioche to form a sandwich.

3. Mix the Custard

In a shallow dish, whisk together eggs, milk, cream, vanilla, cinnamon, and salt.

4. Dip and Cook

Heat a skillet or griddle over medium heat and melt butter.
Dip each stuffed sandwich into the custard mixture, allowing it to soak for 10–15 seconds per side.
Cook each sandwich for 2–3 minutes per side until golden brown and crisp.

5. Make the Bourbon Maple Syrup

In a small saucepan, heat maple syrup, bourbon, and butter over low heat for 2–3 minutes until smooth and fragrant.
