1. Preheat and Prep
Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
2. Cook the Sausage
In a skillet over medium heat, cook the sausage until browned and crumbly. Drain excess grease and let cool slightly.

In a large bowl, whisk together eggs, milk, biscuit mix, salt, and pepper until smooth.
Stir in the cooked sausage and shredded cheese (and veggies, if using).
