🛒 Ingredients

  • 1 lb breakfast sausage

  • 6 large eggs

  • 1 cup shredded cheddar cheese (or pepper jack for spice)

  • 1 cup biscuit baking mix (like Bisquick)

  • ½ cup milk

  • ¼ teaspoon black pepper

  • ¼ teaspoon salt

  • Optional: chopped green onions or diced bell peppers for color

1. Preheat and Prep

Preheat oven to 375°F (190°C). Grease or line a 12-cup muffin tin.

2. Cook the Sausage

In a skillet over medium heat, cook the sausage until browned and crumbly. Drain excess grease and let cool slightly.

In a large bowl, whisk together eggs, milk, biscuit mix, salt, and pepper until smooth.
