French Onion Chicken Bake

Ingredients:
4 Onions, peeled and sliced
4 tbsp Butter
4 cloves Garlic, minced
1/2 tsp Pepper
1 tsp Thyme
2/3 cup Low Sodium Beef Broth
2 tbsp Balsamic Vinegar
4 Chicken Breasts, boneless skinless
1/2 tsp Salt
1 cup Mozzarella Cheese, shredded
1/2 cup Parmesan Cheese, shredded
Directions:
Preheat the oven to 400°F (200°C) and grease a 9×13 inch baking dish.
In a large skillet over medium-high heat, melt the butter. Add the onions and cook for 5 minutes, stirring occasionally.
Reduce heat to medium, add garlic, pepper, and thyme, and cook for another minute.
Stir in beef broth and balsamic vinegar, cooking until onions are caramelized to a jam-like consistency, about 10 minutes.
Spread 1/3 of the onion mixture on the bottom of the prepared dish. Place chicken breasts on top, seasoning with salt.
Cover chicken with remaining onion mixture and top with both cheeses.
Bake for 30 minutes or until chicken reaches an internal temperature of 165°F (74°C).
Serve warm and enjoy!
