Ingredients
⅓ cup avocado oil (or cooking oil of choice)
1 package (10 count) soft taco flour tortillas
1 pound ground beef
1.25 oz package fajita seasoning
1½ cups chunky salsa (divided)
1 (16 oz) can refried beans
2½ cups shredded Mexican blend cheese (divided)
Optional garnishes: diced Roma tomatoes, chopped green onions, sliced black olives
Instructions
Prep the Oven
Preheat oven to 400°F (200°C). Line 2 large baking sheets with aluminum foil or parchment paper for easy cleanup.
Fry the Tortillas
Heat avocado oil in a large skillet over medium heat until it shimmers (about 2 minutes).
Fry each tortilla until golden brown, about 30 seconds to 1 minute per side. Use tongs to flip, then drain on paper towels.
Cook the Beef
In the same skillet, cook the ground beef with the fajita seasoning over medium-high heat, crumbling the beef as it browns (about 5-6 minutes).
Drain any excess grease, then stir in ½ cup chunky salsa and the refried beans. Cook over medium heat for 1-2 minutes or until the mixture is heated through.
Assemble the Mexican Pizzas
Place 2-3 tortillas on each baking sheet.
Spread a heaping ½ cup of the meat and bean mixture onto each tortilla.
Top with another tortilla, then spread 2 tablespoons of remaining chunky salsa on top of each.
Add Cheese and Bake
Sprinkle ½ cup of shredded Mexican blend cheese over each tortilla.
Bake for 6-8 minutes or until the cheese is melted and bubbly.
Add Toppings and Serve
Remove from oven and top with diced Roma tomatoes, chopped green onions, and sliced black olives as desired.
