🛒 Ingredients

  • 2 medium yellow squash or zucchini, sliced into ¼-inch rounds

  • 2 tbsp olive oil

  • ½ cup grated Parmesan cheese

  • ½ tsp garlic powder

  • ½ tsp paprika (optional, for color)

  • Salt and black pepper, to taste

  • Fresh parsley or basil for garnish (optional)

👩‍🍳 Instructions

1. Preheat the Oven

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

2. Prepare the Squash

Slice the squash or zucchini into even ¼-inch thick rounds. Place them in a large bowl.

3. Season

Drizzle olive oil over the squash slices. Add garlic powder, paprika, salt, and pepper. Toss until all pieces are evenly coated.

4. Add Parmesan

Arrange the squash slices in a single layer on the prepared baking sheet.
Sprinkle Parmesan cheese generously over the top of each slice.

5. Roast

Bake for 20–25 minutes, or until the squash is golden and slightly crisp around the edges. For extra crispiness, broil for 1–2 minutes at the end.

6. Serve

Remove from the oven and sprinkle with fresh parsley or basil. Serve hot and enjoy!
