Ingredients:
* 1 lb homemade ground chicken (or store-bought ground chicken)
* 1 bag (16 oz) Great Value peppers & onions blend (frozen or fresh)
* 2 bags (10 oz each) cauliflower rice
* 1 can (10 oz) Great Value fire-roasted taco sauce
* 2 cans (15 oz each) black beans, drained and rinsed
* 2 cans (15 oz each) Mexican corn, drained
* 2 cans (4 oz each) diced green chilies
* Seasoning of your choice (such as chili powder, cumin, garlic powder, onion powder, salt, and pepper)
* 3 tablespoons Walden Farms Street Taco Sauce (Queso variety)
Instructions:
1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
2. In a large skillet over medium heat, cook the ground chicken until it’s no longer pink and fully cooked. Break it apart with a spoon as it cooks.
3. Add the Great Value peppers & onions blend to the skillet with the cooked ground chicken. Cook until the vegetables are softened, about 5-7 minutes.
4. Stir in the cauliflower rice, fire-roasted taco sauce, black beans, Mexican corn, and diced green chilies into the skillet with the chicken and vegetable mixture. Mix well to combine.
5. Season the mixture with your choice of seasonings, adjusting to taste preferences. Common seasonings for Mexican dishes include chili powder, cumin, garlic powder, onion powder, salt, and pepper.
6. Transfer the mixture to the prepared baking dish, spreading it out evenly.
7. Drizzle the Walden Farms Street Taco Sauce (Queso variety) evenly over the top of the casserole.
8. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and bubbly around the edges.
9. Remove the foil and continue baking for an additional 5-10 minutes, or until the top is lightly browned and bubbly.
10. Once done, remove the casserole from the oven and let it cool for a few minutes before serving.
11. Serve hot, garnished with fresh cilantro, diced avocado, or a dollop of Greek yogurt, if desired.
