2 tbsp butter
1 tbsp olive oil
1 medium onion, diced
2 medium carrots, sliced
2 celery stalks, chopped
2 garlic cloves, minced
1/2 cup mushrooms, sliced (optional)
1/4 cup all-purpose flour
4 cups chicken broth
1 cup milk or half-and-half (for extra creaminess)
3 cups cooked chicken, shredded (rotisserie works great)
1 cup frozen peas
1 cup corn kernels
1/2 tsp dried thyme
1/2 tsp dried parsley
Salt & black pepper, to taste
Fresh parsley, chopped (for garnish)
Fresh baked biscuits (homemade or store-bought)
