10 pieces of chicken (thighs and legs with skin)
2 cups wheat flour
5 tbsp cornstarch
2 eggs
1 cup evaporated milk
2 tsp salt
1 tsp black pepper
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
1 tsp dried basil
½ tsp cayenne pepper (optional for spice)
Vegetable oil, for frying

. Prepare the Chicken
Rinse and pat dry the chicken pieces with paper towels.
Season lightly with salt and pepper. Set aside.
2. Make the Egg Wash
In a bowl, whisk together eggs and evaporated milk.
3. Mix the Coating
In a large bowl, combine flour, cornstarch, and all seasonings (paprika, garlic powder, onion powder, oregano, basil, cayenne, salt, and black pepper).
4. Dredge the Chicken
Dip each piece of chicken into the egg wash, letting excess drip off.

5. Fry the Chicken
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).

Place on paper towels to drain excess oil.
