Beef and Pepper Rice Bowl
Ingredients:
1 lb ground beef
1 cup bell peppers, sliced (any color)
1 cup cooked rice
2 cloves garlic, minced
1 onion, chopped
2 tbsp soy sauce
1 tbsp olive oil
1 tsp ground black pepper
Salt to taste
Green onions for garnish
Directions:
In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked through.
Stir in the sliced bell peppers and cook for about 5 minutes, or until they are tender.
Pour in the soy sauce, and season with ground black pepper and salt. Mix well to combine all the flavors.
Serve the beef and pepper mixture over a bed of cooked rice. Garnish with chopped green onions for an extra burst of flavor.
