Cheesy Chicken, Mushroom & Spinach Bake
Ingredients (serves 4)
1½ lb (700 g) boneless chicken breasts or thighs, cut into chunks
2 tbsp olive oil
2 cups mushrooms, sliced
2 cups fresh spinach
3 cloves garlic, minced
1 cup heavy cream (or cooking cream)
½ cup chicken broth
1 cup shredded mozzarella cheese
½ cup shredded Parmesan (or any melty cheese)
1 tsp Italian seasoning
Salt & black pepper, to taste
Optional: ½ tsp paprika or garlic powder
Instructions
Preheat oven
Set oven to 375°F (190°C). Lightly grease a baking dish.Cook the chicken
Heat olive oil in a skillet over medium heat.
Season chicken with salt, pepper, and Italian seasoning.
Brown chicken on all sides (not fully cooked), then transfer to the baking dish.Sauté vegetables
In the same pan, add mushrooms and cook until softened (5 minutes).
Add garlic and spinach; cook until spinach wilts.Make the sauce
Pour in cream and chicken broth. Simmer 2–3 minutes until slightly thickened.
Adjust seasoning.Assemble
Pour mushroom-spinach sauce over the chicken.
Sprinkle mozzarella and Parmesan evenly on top.Bake
Bake uncovered for 25–30 minutes, until bubbly and golden on top and chicken is cooked through.Rest & serve
Let sit 5 minutes before serving.
