🥗 Cranberry Walnut Chickpea Salad with Orange Vinaigrette
Ingredients
Salad
1 can (15 oz) chickpeas, drained and rinsed
½ cup dried cranberries
½ cup walnuts, roughly chopped
2 cups mixed greens or baby spinach
1 avocado, diced
¼ cup red onion, finely chopped (optional)
Orange Vinaigrette
¼ cup fresh orange juice
1 tablespoon orange zest
2 tablespoons olive oil
1 tablespoon apple cider vinegar (or white wine vinegar)
1 teaspoon Dijon mustard
1–2 teaspoons honey or maple syrup
Salt and black pepper, to taste
Instructions
Prepare the salad
In a large bowl, combine chickpeas, dried cranberries, walnuts, greens, avocado, and red onion.
Make the vinaigrette
In a small bowl or jar, whisk together orange juice, orange zest, olive oil, vinegar, Dijon mustard, honey (or maple syrup), salt, and pepper until well combined.
Combine
Pour the vinaigrette over the salad.
Toss gently until everything is evenly coated.
Serve
Taste and adjust seasoning if needed.
Serve immediately or chill for 15–20 minutes for more flavor.
