2 cups cottage cheese

3 large eggs

½ cup sugar or honey (adjust to taste)

½ cup all-purpose flour (or oat flour for a healthier option)

1 teaspoon vanilla extract

1 teaspoon baking powder

¼ teaspoon salt

1 cup blueberries (fresh or frozen)

Optional: powdered sugar or yogurt for topping
Instructions

Preheat oven to 180°C / 350°F. Grease an 8×8 inch baking dish.

Blend cottage cheese until smooth (this makes the bake creamy).

In a bowl, whisk eggs and sugar until light.

Add blended cottage cheese and vanilla. Mix well.

Stir in flour, baking powder, and salt until just combined.

Gently fold in blueberries.

Pour batter into the prepared dish.

Bake for 40–45 minutes, until set and golden on top.

Let cool slightly before slicing.
