🥗 Roasted Vegetable Tray (Oven Baked)

🧾 Ingredients

  • 2 cups butternut squash, peeled & cubed

  • 2 cups carrots, peeled

  • 2 cups Brussels sprouts, halved

  • 1 cup cranberries (fresh or dried)

  • ½ cup walnuts, chopped

  • ½ cup feta cheese, crumbled

  • 4 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp dried thyme or rosemary

  • 1–2 tbsp honey or maple syrup (optional)


👩‍🍳 Instructions

  1. Preheat oven to 200°C (400°F).

  2. Line a large baking tray with parchment paper.

  3. Arrange butternut squash, carrots, and Brussels sprouts separately on the tray.

  4. Drizzle olive oil over vegetables.

  5. Sprinkle salt, pepper, garlic powder, and herbs evenly.

  6. Roast for 25–30 minutes, flipping halfway for even browning.

  7. In the last 10 minutes, add:

    • Cranberries

    • Walnuts

  8. Remove from oven and drizzle honey/maple syrup (optional).

  9. Sprinkle feta cheese on top before serving.

  • Add chicken or salmon for a complete meal

  • Use goat cheese instead of feta if you like

  • Perfect for meal prep or healthy dinner
