Spinach & Feta Puff Pastry Squares
Ingredients

2 sheets puff pastry (thawed if frozen)

300–400 g spinach (fresh or frozen)

200 g feta cheese, crumbled

1 egg (for filling)

1 egg yolk (for brushing on top)

1 small onion (optional), finely chopped

1–2 tbsp olive oil

Salt & pepper, to taste

Sesame seeds (optional, for topping)
Instructions

Prepare the spinach

If using fresh spinach: sauté it with olive oil (and onion if using) until wilted.

If using frozen spinach: thaw it and squeeze out all excess water.

Let it cool slightly.

Make the filling

In a bowl, mix spinach, feta, 1 egg, salt, and pepper.

Taste and adjust seasoning (feta is salty, so go easy).

Assemble

Preheat oven to 200°C (390°F).

Place one sheet of puff pastry on a baking tray lined with parchment.

Spread the filling evenly, leaving a small border around the edges.

Place the second puff pastry sheet on top.

Press edges with a fork to seal.

Cut & brush
-
Lightly score the top into squares (don’t cut all the way through).

Brush with egg yolk.

Sprinkle sesame seeds if you like.

Bake
-
Bake for 25–30 minutes, until golden and puffed.

Cool & serve
-
Let it cool a little, then cut fully into squares.
