Baked Potato Balls

Golden, cheesy, and perfect for using up leftover mashed potatoes.

📝 Ingredients

  • 2 cups cold mashed potatoes (leftovers work best)

  • ½ cup shredded cheddar cheese

  • ¼ cup chopped chives

  • ¼ cup cooked, crumbled bacon

  • 1 large egg, beaten

  • ½ cup breadcrumbs (regular or panko)

  • Salt & pepper, to taste

  • Olive oil spray (for baking)

👩‍🍳 Instructions

1️⃣ Preheat the Oven

  • Heat oven to 400°F (200°C).

  • Line a baking sheet with parchment paper.

2️⃣ Mix the Filling

  • In a large bowl, combine mashed potatoes, cheddar, chives, bacon, egg, salt, and pepper.

  • Mix until evenly blended.

3️⃣ Form the Balls

  • Scoop portions (about golf-ball size) and roll into balls.

4️⃣ Coat with Breadcrumbs

  • Roll each ball in breadcrumbs until coated.

  • Gently press to help crumbs stick.

5️⃣ Bake to Perfection

  • Arrange on the baking sheet.

  • Lightly spray tops with olive oil.

  • Bake 20–25 min until golden and crisp.

6️⃣ Serve & Enjoy

  • Let cool slightly.

  • Serve warm with your favorite dipping sauce.

💡 Tip: For extra flavor, mix a pinch of paprika or garlic powder into the breadcrumbs before coating.
