Ingredients:
¼ cup cottage cheese
1 egg
2 tablespoons almond flour (or oat flour)
1 tablespoon maple syrup or honey
½ teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon baking powder
Pinch of salt
For the cinnamon swirl (optional):
1 teaspoon maple syrup
¼ teaspoon cinnamon
Optional topping:
1 tablespoon Greek yogurt or cream cheese
A little sweetener (for a quick frosting)
Instructions:
In a small bowl or blender, combine cottage cheese, egg, almond flour, maple syrup, vanilla, cinnamon, baking powder, and salt. Blend or whisk until smooth.
Lightly grease a microwave-safe mug or small bowl.
Pour in the batter. For the swirl, mix maple syrup and cinnamon, then drizzle or swirl into the top of the batter.
Microwave on high for 1–1½ minutes, until the center is just set but still moist.
Let cool for 1–2 minutes.
Top with Greek yogurt or sweetened cream cheese for a cinnamon roll–style finish.
