Keto Banana Bread (Low-Carb, No Sugar)
Ingredients

2 cups almond flour (super fine)

2 tbsp coconut flour

1 tbsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

3 large eggs (room temperature)

1/2 cup unsalted butter, melted (or coconut oil)

1/2 cup erythritol or monk fruit sweetener

1 tsp banana extract (gives banana flavor without carbs)

1 tsp vanilla extract

1/2 cup unsweetened almond milk

Optional: 1/4 cup chopped walnuts or pecans

Instructions
1️⃣ Make the Batter

Preheat oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.

In one bowl, whisk almond flour, coconut flour, baking powder, cinnamon, and salt.

In another bowl, whisk eggs, melted butter, sweetener, banana extract, vanilla extract, and almond milk.

Combine wet and dry ingredients, stirring until just combined. Fold in nuts if using.

2️⃣ Bake

Pour batter into the prepared loaf pan.

Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.

3️⃣ Cool & Serve

Let cool completely before slicing for best texture.
