1 cup crushed pork rinds or unsweetened coconut flakes or keto cereal (for crunch)

Melt the chocolate:
In a microwave-safe bowl or over a double boiler, melt chocolate chips, peanut butter, and coconut oil. Stir every 30 seconds until smooth.Add flavor and crunch:
Stir in vanilla extract and your chosen crunchy mix-in (pork rinds, coconut flakes, or keto cereal). Mix well to coat evenly.Assemble:
Line an 8×8-inch pan with parchment paper. Pour the mixture into the pan and spread it evenly.Chill:
Refrigerate for 1–2 hours, or until fully set.Cut and serve:
Once hardened, cut into bars or squares. Store in the refrigerator for up to 2 weeks.
🍬 Tips
For a richer flavor, add a sprinkle of sea salt or crushed nuts on top before chilling.
Use Monk fruit or erythritol-sweetened chocolate to keep it sugar-free.
You can also add 1 tablespoon of chia seeds for extra texture and fiber.
