Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or an 8×8-inch for thicker layers. -
Prepare the Apple Filling
In a large bowl, toss sliced apples with lemon juice, sugar, cinnamon, nutmeg, vanilla, and cornstarch (if using). Mix until evenly coated, then spread evenly into the prepared baking dish. -
Make the Crisp Topping
In another bowl, combine oats, flour, brown sugar, cinnamon, and salt. Pour in the melted butter and mix until the topping resembles coarse crumbs. -
Assemble the Apple Crisp
Evenly sprinkle the oat mixture over the apples, making sure to cover them completely. -
Bake
Bake uncovered for 40–45 minutes, or until the top is golden brown and the apple filling is bubbling around the edges. -
Cool & Serve
Allow to cool slightly before serving. Serve warm with a scoop of vanilla ice cream or a drizzle of caramel sauce.
