🥗 Cranberry Walnut Chickpea Salad with Orange Vinaigrette

Ingredients

Salad

  • 1 can (15 oz) chickpeas, drained and rinsed

  • ½ cup dried cranberries

  • ½ cup walnuts, roughly chopped

  • 2 cups mixed greens or baby spinach

  • 1 avocado, diced

  • ¼ cup red onion, finely chopped (optional)

Orange Vinaigrette

  • ¼ cup fresh orange juice

  • 1 tablespoon orange zest

  • 2 tablespoons olive oil

  • 1 tablespoon apple cider vinegar (or white wine vinegar)

  • 1 teaspoon Dijon mustard

  • 1–2 teaspoons honey or maple syrup

  • Salt and black pepper, to taste


Instructions

  1. Prepare the salad

    • In a large bowl, combine chickpeas, dried cranberries, walnuts, greens, avocado, and red onion.

  2. Make the vinaigrette

    • In a small bowl or jar, whisk together orange juice, orange zest, olive oil, vinegar, Dijon mustard, honey (or maple syrup), salt, and pepper until well combined.

  3. Combine

    • Pour the vinaigrette over the salad.

    • Toss gently until everything is evenly coated.

  4. Serve

    • Taste and adjust seasoning if needed.

    • Serve immediately or chill for 15–20 minutes for more flavor.
