Crispy Zucchini & Scallion Pancakes (with Soy Dipping Sauce)

🥬 Ingredients

  • 2 medium zucchini (julienne ya patli slices)

  • 2–3 green onions (chopped)

  • 1/2 cup all-purpose flour

  • 2 tbsp cornstarch

  • 1 egg

  • 1/3–1/2 cup cold water

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp garlic powder (optional)

  • Oil for shallow frying

  • Sesame seeds (optional)

🍳 Method

  1. Zucchini ko thora sa namak laga kar 10 min chhor dein, phir pani nichor lein.

  2. Bowl mein flour, cornstarch, salt, pepper, garlic powder mix karein.

  3. Egg aur cold water daal kar smooth batter bana lein.

  4. Zucchini aur green onions batter mein fold karein.

  5. Pan garam karein, thora oil daal kar spoon se chotay pancakes dalain.

  6. Medium heat par 2–3 min per side golden aur crispy hone tak fry karein.

  7. Upar se sesame seeds sprinkle kar sakte hain.

🥣 Soy Dipping Sauce

  • 3 tbsp soy sauce

  • 1 tbsp rice vinegar ya lemon juice

  • 1 tsp sesame oil

  • 1/2 tsp sugar

  • 1 tsp chopped green onion

  • Thora sa sesame seeds / chili flakes (optional)
