Mixed Fruit Cake (Moist & Soft)

Ingredients

Dry

  • 1½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp cinnamon powder (optional)

  • ¼ tsp nutmeg (optional)

  • Pinch of salt

Fruits & Nuts

  • ¾ cup mixed dried fruits
    (raisins, black raisins, chopped apricots, dates, tutti frutti)

  • ¼ cup chopped nuts (optional)

  • 1 tbsp flour (to coat fruits)

Wet

  • ½ cup sugar (brown or white)

  • 2 eggs

  • ½ cup vegetable oil or melted butter

  • ½ cup milk or orange juice

  • 1 tsp vanilla essence


Instructions

  1. Preheat oven to 170°C (340°F). Grease and line a round or loaf pan.

  2. Toss mixed fruits and nuts with 1 tbsp flour. Set aside.

  3. In a bowl, whisk eggs and sugar until slightly fluffy.

  4. Add oil/butter, milk (or juice), and vanilla. Mix well.

  5. Sift in all dry ingredients. Fold gently.

  6. Add fruits and nuts. Mix lightly.

  7. Pour batter into the pan and level the top.

  8. Bake 45–55 minutes until a toothpick comes out clean.

  9. Cool completely before slicing.


Tips for Best Results

  • Use orange juice for extra flavor.

  • For extra moisture, brush warm cake with 2–3 tbsp warm milk.

  • Store in an airtight container — tastes even better the next day 😋
