Keto Butter Swim Biscuits

(Makes 9 biscuits)

Ingredients

Dry Mix:

2 cups almond flour (super fine)

1 tbsp baking powder

½ tsp salt

Wet Mix:

2 large eggs

1 cup unsweetened almond milk (or coconut milk)

1 tsp apple cider vinegar (optional, for extra fluffiness)

Butter Layer:

½ cup (1 stick) unsalted butter, melted

Instructions
1️⃣ Preheat Oven & Prep Pan

Preheat oven to 350°F (175°C).

Pour melted butter into an 8×8-inch baking dish.

2️⃣ Mix Dry Ingredients

In a medium bowl, whisk together almond flour, baking powder, and salt.

3️⃣ Mix Wet Ingredients

In another bowl, whisk eggs, almond milk, and apple cider vinegar until combined.

4️⃣ Combine Batter

Pour wet mixture into dry mixture and stir until fully combined into a thick batter.

5️⃣ Assemble & Bake

Pour biscuit batter over the melted butter in the baking dish (do not stir).

Smooth the top and score into 9 equal sections with a knife.

Bake for 25–30 minutes until golden brown and set.

6️⃣ Serve

Let cool slightly before cutting. Serve warm with keto-friendly butter, sugar-free jam, or gravy.
