Low-Point Fresh Apple Oatmeal Cookies (Weight Watchers)
Ingredients:
  • 1 cup old-fashioned rolled oats
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup (for a vegan option)
  • 1 teaspoon vanilla extract
  • 1 cup finely chopped apples (about 1 medium apple)
Instructions:
  • Preheat the Oven:Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
  • Prepare the Dry Ingredients:In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Stir until well combined.
  • Prepare the Wet Ingredients:In a separate bowl, whisk together the melted butter, unsweetened applesauce, honey or maple syrup, and vanilla extract until smooth and well combined.
  • Combine Wet and Dry Ingredients:Pour the wet ingredients into the bowl of dry ingredients and mix until just combined. Be careful not to overmix. Gently fold in the finely chopped apples until evenly distributed throughout the cookie dough.
