☑️ Ingredients:
For the Crust/Base:
– 1 1/2 cups crushed peanut butter cookies (like Nutter Butters or homemade)
– 3 tbsp melted butter
For the Cheesecake Filling:
– 8 oz cream cheese, softened
– 1/2 cup creamy peanut butter
– 1/3 cup powdered sugar
– 1/2 tsp vanilla extract
– 1 cup whipped topping (like Cool Whip) or homemade whipped cream
Toppings (Optional):
– Extra cookie crumbles
– Mini chocolate chips
– Drizzle of melted peanut butter or chocolate

1. Make the Crust Layer:
– Mix the crushed peanut butter cookies with the melted butter.
– Press a couple of spoonfuls of the mixture into the bottom of small dessert cups or jars to form a crust layer.
2. Make the Cheesecake Filling:
– In a bowl, beat the softened cream cheese, peanut butter, powdered sugar, and vanilla until smooth and creamy.
– Fold in the whipped topping gently until well combined.
3. Assemble the Cups:
– Spoon or pipe the cheesecake filling over the cookie crust.
– Smooth the tops with a spoon or offset spatula.
4. Chill & Serve:
– Refrigerate for at least 2 hours to allow the cheesecake to set.
– Before serving, add optional toppings such as crushed cookies, chocolate chips, or a drizzle of peanut butter or chocolate.
