Chicken, Zucchini, and Fresh Corn Burgers with Tomato-Cucumber Relish

Ingredients:
For the Chicken Burgers:
– 1 pound ground chicken
– 1 medium zucchini, grated and excess moisture squeezed out
– 1 cup fresh corn kernels (about 2 ears of corn)
– 1/4 cup breadcrumbs (you can use whole wheat or gluten-free)
– 1/4 cup grated Parmesan cheese (optional)
– 1 clove garlic, minced
– 1 teaspoon onion powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon paprika
– 1 tablespoon fresh parsley, chopped (optional)
– Olive oil for cooking
For the Tomato-Cucumber Relish:
– 1 cup cherry tomatoes, halved
– 1 cucumber, diced
– 1 tablespoon red onion, finely chopped
– 1 tablespoon fresh lemon juice
– 1 tablespoon olive oil
– Salt and pepper to taste
– Fresh basil or cilantro for garnish (optional)
### Instructions:
1. Prepare the Relish:
– In a bowl, combine the cherry tomatoes, cucumber, red onion, lemon juice, olive oil, salt, and pepper.
– Mix well and set aside to let the flavors meld while you prepare the burgers.
2. Make the Chicken Burgers:
– In a large mixing bowl, combine the ground chicken, grated zucchini, corn kernels, breadcrumbs, Parmesan cheese (if using), minced garlic, onion powder, salt, pepper, paprika, and parsley.
– Mix until just combined—do not overmix.
3. Form the Patties:
– Divide the mixture into 4 equal portions and form each portion into a patty, about 1/2 inch thick.
4. Cook the Patties:
– Heat a large skillet or grill pan over medium heat and add a drizzle of olive oil.
– Once hot, add the chicken patties to the pan. Cook for about 5-7 minutes on each side, or until they are cooked through and have a nice golden brown color. The internal temperature should reach 165°F (75°C).
5. Assemble the Burgers:
– You can serve the patties on burger buns or lettuce wraps. Top each patty with a generous spoonful of the tomato-cucumber relish.
6. Serve:
