Ingredients
– 4 tablespoons of soft butter
– 1 large chopped onion
– 2 minced garlic cloves
– 120 ml of chicken or vegetable broth
– 4 large potatoes peeled and cut into cubes
– 80 ml of chopped broccoli florets
– 2 large carrots peeled and cut into cubes
– 250 ml of thick fresh cream
– 500 ml of grated cheddar – Salt and pepper to taste
– 1/2 teaspoon of paprika
– 1/2 teaspoon of dried thyme
– 1/2 teaspoon of dried basil
– Fresh chopped parsley for garnish
Preparation
Bring back the onion and garlic: – In a large saucepan or a cookout, melt the butter over medium heat. – Add the chopped onion and fry until tender and translucent, about 5 minutes. – Add minced garlic and continue cooking for 1 minute, until fragrant. Add vegetables:- Add diced potatoes, chopped broccoli and diced carrots
