🛒 Ingredients
For the Caramel Sauce:

1 cup granulated sugar

¼ cup water

4 tbsp unsalted butter (room temperature)

½ cup heavy cream (warm)

½ tsp sea salt (adjust to taste)
For the Ice Cream Base:

1½ cups whole milk

1½ cups heavy cream

¾ cup granulated sugar

4 large egg yolks
-
1 tsp vanilla extract

½ tsp sea salt
👩🍳 Instructions
1. Make the Caramel Sauce
In a medium saucepan, heat sugar and water over medium heat, stirring only until the sugar dissolves.
Once boiling, stop stirring and cook until the mixture turns a deep amber color.
Remove from heat and carefully whisk in butter and warm cream (it will bubble vigorously).
Add salt, stir until smooth, and set aside to cool slightly.
2. Prepare the Ice Cream Base
In a separate saucepan, heat milk, cream, and half the sugar until steaming (don’t boil).
In a bowl, whisk egg yolks with the remaining sugar until pale and thick.
Slowly pour some of the hot milk mixture into the yolks, whisking constantly to temper them.
Return the mixture to the saucepan and cook over low heat, stirring, until it thickens slightly and coats the back of a spoon (170–175°F / 77–80°C).
Remove from heat, stir in vanilla extract, sea salt, and half of the caramel sauce.
3. Chill the Mixture
Pour the custard through a fine sieve into a clean bowl.
Cover and refrigerate for at least 4 hours or until thoroughly chilled.
4. Churn the Ice Cream
Pour the chilled custard into your ice cream maker and churn according to manufacturer’s instructions (about 20–25 minutes).
In the last minute of churning, drizzle in the remaining caramel sauce for beautiful swirls.
5. Freeze & Serve
Transfer the ice cream to a lidded container and freeze for at least 4 hours or until firm.
Scoop and sprinkle lightly with extra sea salt flakes before serving for that perfect salty-sweet finish.
