Cheesy Chicken, Mushroom & Spinach Bake
Ingredients (serves 4)

1½ lb (700 g) boneless chicken breasts or thighs, cut into chunks

2 tbsp olive oil

2 cups mushrooms, sliced

2 cups fresh spinach
-
3 cloves garlic, minced
-
1 cup heavy cream (or cooking cream)

½ cup chicken broth
-
1 cup shredded mozzarella cheese
-
½ cup shredded Parmesan (or any melty cheese)

1 tsp Italian seasoning

Salt & black pepper, to taste

Optional: ½ tsp paprika or garlic powder
Instructions

Preheat oven
Set oven to 375°F (190°C). Lightly grease a baking dish. -
Cook the chicken
Heat olive oil in a skillet over medium heat.
Season chicken with salt, pepper, and Italian seasoning.
Brown chicken on all sides (not fully cooked), then transfer to the baking dish. -
Sauté vegetables
In the same pan, add mushrooms and cook until softened (5 minutes).
Add garlic and spinach; cook until spinach wilts. -
Make the sauce
Pour in cream and chicken broth. Simmer 2–3 minutes until slightly thickened.
Adjust seasoning. -
Assemble
Pour mushroom-spinach sauce over the chicken.
Sprinkle mozzarella and Parmesan evenly on top. -
Bake
Bake uncovered for 25–30 minutes, until bubbly and golden on top and chicken is cooked through. -
Rest & serve
Let sit 5 minutes before serving.
