🥒 Cheesy Zucchini Cups Recipe
Ingredients:
2 medium zucchini (grated)
2 eggs
1 cup mozzarella cheese (grated)
½ cup cheddar or parmesan cheese
½ cup breadcrumbs (or oats)
2 tbsp green onions or chives (chopped)
1 small onion (finely chopped)
2 cloves garlic (minced)
Salt to taste
Black pepper to taste
½ tsp Italian seasoning or mixed herbs
1 tbsp olive oil or butter

Prepare zucchini:
Grate zucchini and squeeze out all excess water using a cloth or hands.Mix ingredients:
In a bowl, add zucchini, eggs, cheeses, breadcrumbs, onion, garlic, green onions, salt, pepper, and herbs. Mix well.Prepare tray:
Grease a muffin tray with oil or butter.Fill cups:
Spoon mixture into muffin cups and press lightly.Bake:
Bake at 180°C (350°F) for 20–25 minutes until golden and crispy on top.Cool & serve:
Let cool for 5 minutes, then remove gently.
🌟 Tips:
For extra crisp: broil for last 2–3 minutes
Add chili flakes for spice
Serve with garlic yogurt dip or ketchup
