Cottage Cheese & Spinach Crustless Quiche

Ingredients

  • 4 large eggs

  • 1 cup cottage cheese

  • 1 cup shredded cheese (cheddar or mozzarella)

  • 2 cups fresh spinach (chopped)

  • ½ small onion, finely chopped (optional)

  • 2 tbsp olive oil or butter

  • ¼ tsp black pepper

  • ½ tsp salt (adjust to taste)

  • ¼ tsp garlic powder (optional)

  • ¼ tsp dried oregano or mixed herbs


Instructions

  1. Preheat oven to 180°C / 350°F. Grease a baking dish.

  2. Heat oil in a pan and sauté onion until soft.

  3. Add spinach and cook just until wilted. Let cool slightly.

  4. In a bowl, whisk eggs.

  5. Add cottage cheese, shredded cheese, salt, pepper, and herbs.

  6. Stir in the cooked spinach mixture.

  7. Pour into the greased dish.

  8. Bake for 30–35 minutes until set and golden on top.

  9. Let rest 5–10 minutes before slicing.


Tips & Variations

  • Add mushrooms or bell peppers for extra veggies

  • Use feta instead of cottage cheese for a sharper taste

  • Great for breakfast, lunch, or meal prep
