Ingredients:
• 1 3/4 cups all-purpose flour
• 1/2 cup granulated sugar
• 1/2 cup brown sugar
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1 teaspoon ground cinnamon
• 1/2 cup unsalted butter, melted
• 1 cup buttermilk
• 1 large egg
• 1 teaspoon vanilla extract
For the Cream Cheese Filling:
• 8 oz cream cheese, softened
• 1/4 cup granulated sugar
• 1 teaspoon vanilla extract
For the Cinnamon Swirl:
• 1/4 cup granulated sugar
• 1 teaspoon ground cinnamon
Instructions:
Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
In another bowl, whisk together the melted butter, buttermilk, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined.
In a medium bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
In a small bowl, mix together the granulated sugar and ground cinnamon.
Spoon a tablespoon of muffin batter into each muffin liner.
Add a teaspoon of the cream cheese filling on top of the batter in each liner.
Spoon another tablespoon of muffin batter over the cream cheese filling.
Sprinkle the cinnamon sugar mixture generously over the tops of the muffins.
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
