🥒 Cheesy Zucchini Cups Recipe
Ingredients:

2 medium zucchini (grated)

2 eggs
-
1 cup mozzarella cheese (grated)

½ cup cheddar or parmesan cheese

½ cup breadcrumbs (or oats)

2 tbsp green onions or chives (chopped)

1 small onion (finely chopped)
-
2 cloves garlic (minced)
-
Salt to taste

Black pepper to taste

½ tsp Italian seasoning or mixed herbs

1 tbsp olive oil or butter
👩🍳 Method:

Prepare zucchini:
Grate zucchini and squeeze out all excess water using a cloth or hands. -
Mix ingredients:
In a bowl, add zucchini, eggs, cheeses, breadcrumbs, onion, garlic, green onions, salt, pepper, and herbs. Mix well. -
Prepare tray:
Grease a muffin tray with oil or butter. -
Fill cups:
Spoon mixture into muffin cups and press lightly. -
Bake:
Bake at 180°C (350°F) for 20–25 minutes until golden and crispy on top. -
Cool & serve:
Let cool for 5 minutes, then remove gently.

For extra crisp: broil for last 2–3 minutes
