🥒 Cheesy Zucchini Cups Recipe

Ingredients:

  • 2 medium zucchini (grated)

  • 2 eggs

  • 1 cup mozzarella cheese (grated)

  • ½ cup cheddar or parmesan cheese

  • ½ cup breadcrumbs (or oats)

  • 2 tbsp green onions or chives (chopped)

  • 1 small onion (finely chopped)

  • 2 cloves garlic (minced)

  • Salt to taste

  • Black pepper to taste

  • ½ tsp Italian seasoning or mixed herbs

  • 1 tbsp olive oil or butter


👩‍🍳 Method:

  1. Prepare zucchini:
    Grate zucchini and squeeze out all excess water using a cloth or hands.

  2. Mix ingredients:
    In a bowl, add zucchini, eggs, cheeses, breadcrumbs, onion, garlic, green onions, salt, pepper, and herbs. Mix well.

  3. Prepare tray:
    Grease a muffin tray with oil or butter.

  4. Fill cups:
    Spoon mixture into muffin cups and press lightly.

  5. Bake:
    Bake at 180°C (350°F) for 20–25 minutes until golden and crispy on top.

  6. Cool & serve:
    Let cool for 5 minutes, then remove gently.


🌟 Tips:

  • For extra crisp: broil for last 2–3 minutes

  • Add chili flakes for spice

  • Serve with garlic yogurt dip or ketchup
