Cozy fall flavors meet protein-packed goodness in every fluffy bite of these pancakes!
Made with cottage cheese, almond flour, and real pumpkin purée — they’re low-carb, gluten-free, and taste like a warm hug from autumn itself 

3/4 cup almond flour
1/2 cup cottage cheese
1/4 cup pumpkin purée
2 eggs
1 tbsp melted unsalted butter
2 tbsp sweetener
1 tsp pumpkin pie spice
1 tsp vanilla extract
1 tsp baking powder
1. Blend all ingredients until smooth.
2. Pour onto a greased pan over medium-low heat.
3. Cook 2–3 minutes per side until golden and fluffy.
4. Serve warm with sugar-free syrup, whipped cream, or a sprinkle of cinnamon!
