– Sour Cream Blueberry Coffee Cake
– Ingredients:
– 2 cups all-purpose flour
– 1 cup granulated sugar
– 1/2 cup unsalted butter, softened
– 1 cup sour cream
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 1 1/2 cups fresh blueberries
– 1/4 cup brown sugar (for topping)
– 1 teaspoon cinnamon (for topping)
Directions:
1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
3. Add the eggs, one at a time, mixing well after each addition. Stir in the sour cream and vanilla extract until combined.
4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
6. Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.
