  • 2 cups old-fashioned rolled oats

  • ½ cup unsalted butter, melted (or coconut oil)

  • 1 tsp vanilla extract

  • ¼ cup honey or maple syrup

  • 1 large egg

For the Blueberry Filling

  • 2 cups fresh or frozen blueberries

  • 2 tbsp lemon juice

  • 2 tbsp maple syrup (or honey)

  • 1 tbsp cornstarch (for thickening)

1. Preheat the Oven

Preheat to 350°F (175°C). Line an 8×8-inch pan with parchment paper and lightly grease it.

2. Make the Blueberry Filling

In a small saucepan, combine blueberries, lemon juice, and maple syrup.
Heat over medium heat for 5–7 minutes until the berries start to break down.
Stir in cornstarch and cook for 1–2 minutes more until thickened. Set aside to cool slightly.

3. Prepare the Oat Mixture

In a large bowl, mix oats, flour, brown sugar, baking powder, salt, and cinnamon.
Stir in melted butter, vanilla, honey, and egg until well combined.
The texture should be crumbly but hold together when pressed.

4. Assemble the Bars

Press two-thirds of the oat mixture evenly into the bottom of the prepared pan.
Spread the blueberry filling evenly over the crust.
Crumble the remaining oat mixture over the top.

5. Bake

Bake for 30–35 minutes, or until the top is golden brown and set.
Let cool completely before cutting into squares.
